Why bone broth isn’t vegan: collagen is found only in animals

The distinction rests on biology, not cooking technique. Collagen is the main structural protein in animals, giving strength to connective tissue. Plants rely on entirely different compounds such as cellulose, so no vegetable, fungus or marine plant produces collagen.
