Ingredients:
50g Freja Vanilla Collagen Powder (2 servings)
125g self-raising flour
150ml milk (dairy or plant-based)
1 large egg
1 tsp baking powder
Butter or coconut oil, for pan-frying
Method:
1. In a bowl, mix the Vanilla Collagen Protein Powder, flour, and baking powder.
2. In a separate bowl, whisk together the milk and egg, then pour into the dry ingredients and stir until smooth.
3. Heat a non-stick pan over medium heat and lightly grease with butter or coconut oil.
4. Pour small ladles of batter into the pan to form pancakes. Cook 2–3 minutes until bubbles appear on the surface, then flip and cook 1–2 minutes until golden.
5. Serve warm with your favourite toppings. We love greek yogurt, berries, nut butter, or maple syrup.
