Ingredients
250g pre-cooked shredded chicken
150g mushrooms, sliced or torn
1–2 tsp Tom Yum paste (adjust to taste)
200ml coconut milk
500ml Freja Classic Chicken Bone Broth
Juice of ½ lime
2 tbsp fresh coriander, chopped
Method
1. In a small saucepan, combine the Freja Classic Chicken Bone Broth and Tom Yum paste. Heat gently over medium heat, stirring until the paste is fully dissolved.
2. Add the mushrooms to the broth and simmer for 2–3 minutes until tender.
3. Stir in the coconut milk and add the pre-cooked shredded chicken just to warm through for 3-4 minutes. Taste and adjust with extra Tom Yum paste or a squeeze of lime juice if desired.
4. Divide the bone broth, mushrooms, and chicken between two bowls.
5. Finish with fresh lime juice and a sprinkle of chopped coriander, then serve immediately while hot.
